Portugal to UK ? Ferry
Having done this run in a S1 several times I would say the options depend
very much on how much time you have and how far you wish to drive at a go. I
once drove my S1 from Cambridgeshire UK to the Algarve Portugal in three
days and I was totally cream crackered. 
The Spain - UK ferry is a good option but you need to balance up the costs. 
From Santander to Calais by road is about 1450k which is about 200Litres of
petrol, which at present pump prices is aprox 120GBP . On top of that you
will need an overnightstop - half way through France - say 40GBP. With snap
you are looking at 200GBP each way.
The Ferry is not much more expensive and does save wear and tear although
you don't get to see much scenery (except the dolphins and whales in the Bay
of Biscay). 
If you choose the Ferry route I, personally would go from Bilbao to
Portsmouth rather than Santander - Plymouth. as the Autovia from Santander
to Bilbao is a more picturesque and simpler drive than the journey from
Plymouth across southern England. 
If you have the time though  I would recommend driving through.
There is a lot of motorway through Spain and France that you can use or
choose to avoid as the alternative roads (through France at least) are
excellent and can often be traversed at motorway speeds. (80kph in an S1).
Additionaly you have the opportunity of being able to stop at several caves
en route if you are partial to the odd bottle of vino.
