Dear Ian,

It has been some time since I peered into a 2 Litre, but I think the new
seats need to be pressed in by a machine shop. You could have a talk to
them to see if they will do this with the rest of the engine assembled. One
trouble might be the cuttings from the recess needed to install new seats.
Usually the original seat is integral to the block. A new seat requires
machining a step for a new one to be pressed in. Then, the valve and seat
need to be ground for proper fit.
For unleaded 2.25, a hardened seat used for propane conversions can be
used with the hardened exhaust valve. Perhaps a similar hardened seat can
be found by an engine machining shop near you? You would have to see what
their ability and comfort level is regarding installing seats with the motor
partially assembled.
