There are a few things one can do as well as check the thermostat.

Assuming the rest of the cooling system is ok, back flush the heater core
with a garden hose if there is good water pressure. You will be amazed at
the rust and gunge that this will clear out.

Fit a water temp gauge and a rad muff.
